What this is
A session for one business date. Add lines, enter prepared qty, sell as usual, then close.
Daily Prep is for this morning’s cook list. It is not where you type the recipe (that is Recipe, quantities for one item). It is not a full production batch unless you also stock Batch-Stocked items.
Close dispositions
Counted left is the physical stock still on the shelf — that amount carries overnight. Expected (prepared + added − sold) minus counted left needs a disposition: Waste, Spoilage, Staff consumption, Owner / internal use, Complimentary / giveaway, Donation, Damaged, or Other. Carry forward is not chosen separately.
Items that cannot be carried forward stay at counted left 0; the whole expected leftover needs a disposition.

Recipe-on-Sale vs stocked buns
Untracked / Recipe-on-Sale menu items (latte, made-to-order food) stay count-only on Daily Prep if you add them — ingredients deduct on sale from the recipe.
If you bake Batch-Stocked buns, production or prep qty is what you actually made. Leftovers at close should not also be posted again as Waste & Consumption.
Guest menu
Customer Ordering has Show only today’s available Daily Prep items. When on, the public menu and table QR only list online-enabled products on today’s open Daily Prep, with remaining qty — unless the product’s category is Always show online. If Daily Prep is not open, only those always-online categories stay on the guest menu. See Sell products online and Categories.
